My husband decided to make a shepherd’s pie with lentils and mashed potatoes. It turned out really great. For me, it was the perfect thing after a strenuous day of bridge inspections. Today was our first sunny day, when it wasn’t raining, in quite a while.

And here are a couple more pictures of the vegan shepherd’s pie made with lentils and mashed potatoes. This is how it looked right out of the oven. My husband is a devoted meat eater, but he loved this vegan and vegetarian dish. Tasty comfort food!

For the sake of animals, I think it’s important for people to see that it’s not necessary to be strictly vegan or strictly vegetarian or strictly anything at all, if you’re trying to help the trillions of fish and billions of other animals that are harmed every year for our food system. I realize that most people don’t have time to create content; hopefully in the future, I can start doing interviews with people from all around the world and writing up their stories for them. In this way, I can do the work of getting the opinions and experiences of other people published. However, for right now, while I am still working my full-time job, on top of everything else, I only have time for creating my own content while encouraging others to contribute their own experiences and stories.
