My husband decided to make a shepherd’s pie with lentils and mashed potatoes. It turned out really great. For me, it was the perfect thing after a strenuous day of bridge inspections. Today was our first sunny day, when it wasn’t raining, in quite a while.


I’m including some pictures for you from our journey to and from the bridge inspection. 



And here are a couple more pictures of the vegan shepherd’s pie made with lentils and mashed potatoes. This is how it looked right out of the oven. My husband is a devoted meat eater, but he loved this vegan and vegetarian dish. Tasty comfort food!

In this way, I can do the work of getting the opinions and experiences of other people published. However, for right now, while I am still working my full-time job, on top of everything else, I only have time for creating my own content while encouraging others to contribute their own experiences and stories.
