Super Bowl Leftovers: Vegan Gluten-Free Salad

Yay! Super Bowl vegan gluten-free salad leftovers. See my previous post for more details on the ingredients. As I mentioned there, this salad is vegan, gluten-free, soy-friendly and nut-friendly.

At home, I added hemp seeds for some extra omegas and flavor.

Then I decided to add roasted, salted pumpkin seeds or pepitas for more amino acids (protein), flavor and crunch.

After that (see last photo), I added vegan Parmesan cheese (Whole Foods brand). Was just curious how that would taste. Super yum!

I love having salad leftovers like this so I can dump some in a bowl and get some fruit and greens without much prep time. With the edamame (soybeans), it includes a complete protein.

Remember … no need to be vegan or vegetarian to enjoy nutritious and delicious vegan and vegetarian meals. I’m neither strictly vegan nor strictly vegetarian, and yet … I eat three vegan or veganish meals per day as my usual thing! But that’s me … a person can eat vegan or vegetarian/meatless meals as little or as often as they want.

Whatever animal-free choices that may be reasonable for you, it you can go for those, and if lots of other people can go for those, too, it can accumulate to be enough to move the needle away from harming more and more animals every year (our current situation). If we all participate by doing what’s reasonable for us (without worrying about perfection), I believe we can move the needle toward harming far fewer animals than what we have as the current situation today.

Together we can do it!
