Congee or jook made with daikon radish

Congee / jook made with rice, mushrooms, miso, and daikon! Plus cashew tofu toppings, green onions, chili oil, sesame oil and soy sauce.

The picture doesn’t do it justice, but … my husband made the most delicious congee or jook the other day. It’s something like a Chinese porridge. He usually makes it simply with rice and no chicken, vegan broth by Imagine foods.

This time hubby made the congee from a recipe from Yeung Man Cooking. The recipe included a special kind of mushrooms, which hubby found at the local Asian market, and daikon radish. The recipe called for slowly spooning liquid on, similar to risotto. It was very time consuming to make. But my goodness, it came out so delicious. I think the daikon radish added an amazing texture and umami quality.
