I’ve shared about these before, and we have them often, so perhaps I take them for granted. These are Meatless, Possibly Vegan, Definitely Veganish … Ecuadorian Style Empanadas in San Francisco!

What a blessing that we can walk just a couple blocks from our house to pick up freshly baked empanadas …, possibly similar to the empanadas my grandmother would make in Ecuador.

I’d like to learn to make Ecuadorian-style empanadas and veganize what I can like they do at Martha’s coffee shop in San Francisco. The filling for these is mushrooms or champiñones, sometimes with Beyond or Impossible meat (vegan mince or vegan ground beef substitute).

I learned to bake from my older sisters and from my mother in Missouri and Texas USA. My father was from Ecuador, and so were his parents (my paternal grandparents) and their parents (my great-grandparents), and so on, but I never got to meet them, so … I never learned to make empanadas myself. Hopefully I will get to go to Ecuador someday and meet my Ecuadorian cousins and learn the authentic recipes.
