Vegan leftovers mishmash! Plus, some cautionary words about the tendency to assume that things should be easy for other people. Often times, things feel easy for us because of our own advantages in life or because we have had plenty of practice. This is where we get the disconnect, of not understanding why other people are not doing certain “helpful” things. If you run a 3-mile race, and it feels easy because you are used to running 10-mile races or marathons, that doesn’t change the fact that it is actually a very difficult thing. Most people cannot run 3 miles without stopping, and yet, you can do it effortlessly. It’s an important perspective to keep in mind.
