Thought I'd share this whole wheat roll recipe: First make a sponge: 1 cup warm water (~110F) 1 cup whole wheat flour 1.5 tsp. yeast Whisk together and let sit for 15-20 minutes or until bubbly. (If it never gets bubbly, your yeast is dead. I keep mine in the fridge and it has lasted... Continue Reading →
Dinner tonight: homemade WW rolls & two happen-to-be vegan pre-made soups combined. And what was up with Sandra Lee?
Any of you 90s kids ever watch Food Network growing up? Do you remember Sandra Lee's Semi-Homemade? Even as a non-adult I thought she was funny to watch. The concept was sprucing up pre-made convenience items. I recall it adding extra vanilla extract to already vanilla flavored things a lot of the time. I imagine... Continue Reading →
Vegan pork rinds at Trader Joe’s (USA) – Spicy Porkless Plant-Based Snack Rinds
Never been a fan of pork rinds, but I do like these vegan pork rinds at Trader Joe’s (USA). A veganish co-worker alerted me to these. The official name is “Spicy Porkless Plant-Based Snack Rinds.” Whew! Try saying that five times fast! A picked up a bag of these for munchies while watching the Super... Continue Reading →
Linda’s weight loss story and how meal replacements can help (TW: WL, EDs)
https://www.pbs.org/video/lindas-weight-loss-journey-part-1-life-weight-loss-vsx8wm/ In search for something to watch while I did my elliptical that wasn't politics (I'm trying to sane and not fall into a deep depression.), I found this on the PBS app on our TV. This little series is about Linda, who lost all three of her brothers to a rare condition called chronic... Continue Reading →
Trader Joe’s Cinnamon Bun Inspired Joe-Joe’s Product Review
The Joe-Joe’s at Trader Joe’s (USA-based grocery store chain) are basically a store brand of Oreos (sandwich creme cookies). I’ve seen the peppermint Joe-Joe!s at Christmas time, which I really like. This was my first time seeing the Trader Joe’s cinnamon bun inspired Joe-Joe’s. Perfect time for a product review! Trader Joe’s Cinnamon Bun Inspired... Continue Reading →
Should your plate be a “rainbow”?
I have lately been thinking about the cliche that your plate should look like a "rainbow." Frankly, I think it's bad advice. If your plate is colorful, that's fine, but there's no need that I know of for your plate to be a rainbow. Most days, I get my 5-11 servings of veggies and fruits,... Continue Reading →
Type 2 Diabetes isn’t prevented or cured by a vegan diet!
Hello world, I’ve been following a 99% to 100% vegan diet for almost 20 years, and it is not preventing Type 2 diabetes for me. Due to my A1c showing up as 6.0 (change from 5.9 four years earlier, last time I checked), the doctor considers me “prediabetic.” However, the doctor said that if I... Continue Reading →
Dinner prep: green lentil lasagna and how I’m meeting higher protein goals with a deficit
Woohoo, I've got the bulk of dinner done and I got it done before 9am! It took me less than 20 minutes too! I found these green lentil lasagna sheets at Aldi last week and thankfully they're oven ready. I also had some Cutting Vedge plant-based crumbles I'd gotten at our neighborhood discount bodega. How... Continue Reading →
I gave soybean noodles a second chance!
And I'm glad I did. I had tried them before, and just couldn't stomach the texture. I compared them to dry-rotted rubber bands, and honestly nothing has changed about them. They still have a texture I'd compare to that, buuuut, I don't know, I'm more accepting these days. Maybe knowing they had 23 grams of... Continue Reading →
Mindfulness Meditation for Better Sleep, Lower Blood Pressure, and Reducing Anxiety
Is there any connection between avoiding animal products and important health factors like a person’s resting heart rate? Unlikely, I say, but prove me wrong. Ha ha! On a separate topic, I mentioned that I found a 10-minute body scan / deep breathing meditation was helpful for me to lower my “in the moment” heart rate (not my resting heart rate) prior to going to sleep.
